First, get a nice, plump boneless chicken breast. You need a thin, sharp knife and you'll cut into the thick part of the breast, forming a cavity.

Then, take extremely thinly cut proscuitto (you can use whatever type of ham you like, but it helps if it's thin) and slices of your favorite cheese (types that work well are Havarti, Gruyere, or Swiss). Inside the cavity put a layer of cheese, then a somewhat thicker layer of ham, and then another layer of cheese.

Close the opening with toothpicks (Don't forget to remove them before eating!). Have a bowl of flour, a bowl of cream, and a bowl of breadcrumbs prepared (if you like your chicken crisper, use water with ice in it - the ice is very important - and a squirt of lemon). You can add spices (at least salt, pepper, and garlic) into the flour.

Thoroughly coat the breast in flour, then dip it in the cream, and then coat it in the breadcrumbs.

Have a hot skillet ready with melted butter (real butter). It can also be done with oil if you prefer. Sautee all sides of the breasts until they start to be golden brown all over.

Have the oven preheated to 375 degrees (F) and put the breasts on a foil covered cookie sheet and cook for 15 to 20 minutes - until you can see the cheese start to melt out of the side of the breast. You can use this time to prepare side dishes.
