This one really lends itself to selective colour technique. I like how the man is absorbed and not aware of photographer. The fact that he is looking down at the selected colourful pens is an added visual guide and a bonus to the photo.

Goal calls for Black and white, not monotone.

This one works well for black and white since the fella is already black and white. The red selective colouring pops nicely. You might want to take this into ps and use your exposure button to give it a bit more brightness...when you do that be careful not to push it too far otherwise you will blow out the white on his neck. Try it, see if you like it better.

This looks like a lot of hard work to bring back all those blues. Again try popping this with a touch more brightness as it feels a tad muddy.
