You can do it as well with lemons and all sorts of citrus fruits.
Oranges are so expensive over here, but when it comes to good food...WHO CARES. Thank you.
I bet you could do the same with mangoes, ginger, papayas...
The recipe says to leave them out on the rack to dry for 24 hours. If I did that in this country within 3 minutes the fruit would be covered by ants, flies, and geckos. Impossible! I can get dried sugared mango, papaya and ginger (which I put in husband's oatmeal).
Maybe you could leave the fruits to dry in the (closed) oven? or...
